Angels and Devils in the Kitchen


* Angel Food Cake

Angel cake (or angel food cake or angelfood cake) is a kind of cake first made in the United States in the 19th century. It is very light and fluffy. Because of its white colour and airy lightness it was said to be the "food of the angels". The taste of the cake, as well as its appearance, have been compared to cotton.

* Devil's Food Cake


A variety of chocolate cake known as Devil's food cake is another popular American cake that was developed after Angel's Food Cake. It was one of the many new American cakes made possible by the invention of baking powder. The difference between the two cakes is that angel food cake is a type of foam cake whereas the devil's food cake is a type of butter cake. Devil's food cake is a moist, airy, chocolate layer cake and it is chocolate-flavoured. Devil's food cake is considered a counterpart to the white or yellow angel food cake.

* Red Velvet Cake


The red velvet cake is closely linked to the devil's food cake, and in some turn of the century cookbooks the two names may have been interchangeable. A Red velvet cake is a type of rich and sweet cake, with a distinctive dark red to bright red or red-brown colour. Common ingredients include buttermilk, butter, flour, cocoa powder, and often either beets, or red food colouring. It is most popular in the Southern United States, though known in other regions. Oprah Winfrey is a huge fan of this type of cake, having featured it on her television programme, and in her O magazine. This attention brought a wave of celebrity fascination with the cake and dozens of them chose Red Velvet wedding cakes.

* More Variations

There are more adapted variations of the traditional Angel's Food Cake. There is Maple-Brown Sugar Angel, Blueberry Angel Food Cake, Raspberry Angel Cake, Strawberry Angel Cake, Lemon Angel Food Cake, Dutch-Chocolate Angel, Rainbow Angel Cake and it is even possible to have a combination of both the Angel's Food Cake and Devil's Cook Cake in the same cake.
